A veggie fried rice is a hearty meal of veggies that is served with steamed rice, or steamed vegetable pasta, to make it extra filling.
The rice is then topped with a sauce, or vegetable sauce, and baked, to create a perfect crunchy filling.
This dish is a great meal for a busy weeknight dinner or to keep in the fridge for later use.
If you like to cook a lot, you can make a vegetarian version of this dish as well.
Here’s how to make veggie rice recipe:1.
In a large skillet, heat olive oil and onions over medium-high heat.
Add garlic and ginger and saute for a minute or two.
Add ginger and cook for another minute or so.
Add potatoes, carrots, and tomatoes and cook, stirring occasionally, for a few minutes.
Add carrots and cook until they are tender.
Add water and tomatoes, along with the onion, garlic, and ginger, and stir.
Cook for another 2-3 minutes, stirring frequently.
Add vegetables, salt, pepper, and chili powder to taste.
Season with black pepper if you like.3.
Add the potatoes and carrots to the pan and sauté until they become tender.
If the vegetables don’t brown, add more water and/or stir to coat.
If they start to brown, reduce the heat to low and add the cooked vegetables.
If this doesn’t happen, add some more vegetable broth and cook the vegetables for another couple of minutes.4.
Add in the noodles and stir until well combined.
Add more water if needed to thin the noodles.5.
Once all of the vegetables have been cooked, pour the noodles into a serving bowl and top with the rice.
Cook over medium heat for about 5 minutes, until the noodles are golden brown.
If desired, you may add a drizzle of hot sauce if desired.6.
