Vegan Quiche: Grilled Beets Recipe: 2 medium beets, peeled and cut into 1/2-inch cubes 1 tablespoon butter 1/4 cup white wine 1/3 cup olive oil 1 teaspoon minced garlic 1/8 teaspoon dried thyme 1/16 teaspoon salt 1/12 teaspoon black pepper 1 tablespoon olive oil Preheat oven to 350 degrees.
Place the beets in a bowl and set aside.
In a large skillet over medium heat, melt the butter over medium-high heat.
Add the wine, olive oil, garlic, thyme, salt and pepper.
Reduce heat to low and simmer, stirring occasionally, until tender, about 1 minute.
Remove from heat.
Meanwhile, place a baking sheet in the oven and preheat the oven to 400 degrees.
Sprinkle the beet cubes on the baking sheet and brush with olive oil.
Place in the preheated oven and cook until golden, about 8 to 10 minutes.
Remove to a plate and let cool.
Repeat with remaining beets.
Recipe Notes Beets can be roasted or baked, but if you roast them they will be crispy.
