Vegetable soup is an easy, healthy way to make vegan food with all of the nutrients it needs.
Ingredients 1 cup chopped onion, diced (about 1/2 onion) 1 small carrot, diced 1 medium yellow onion, chopped (about 2 cloves) 1 large carrot, chopped 1 bunch of celery, diced 4 garlic cloves, minced 1 cup diced tomatoes 1/4 cup coconut oil, plus more for drizzling 1 tbsp ground flaxseed (or another hemp-based protein) 1 tbsp nutritional yeast 1 tsp salt, plus to taste Directions Place the onion, carrot, and onion mixture in a blender.
Blend until smooth.
Add the carrots and celery.
Blend for 30 seconds.
Pour in the coconut oil and nutritional yeast.
Blend again for 5 seconds.
Add salt and the flax seed.
Blend on low for 30 to 45 seconds.
Transfer to a bowl and stir in the tomato, coconut oil (or other oil), and nutritional Yeast.
Transfer the mixture to a large saucepan over medium heat.
Bring to a boil, then reduce heat to low.
Cook, stirring occasionally, for about 15 minutes, until the mixture has reduced by about one-third.
Stir in the remaining ingredients.
Serve warm, garnished with fresh parsley and basil.
Recipe Notes The vegetable soup can be made ahead of time.
Just add the vegetables to the blender and blend on low until the vegetables are just starting to soften.
Add more salt and pepper if needed.
